ALMOND BUTTER BANANA BREAD

Try with your favourite f&f nut butter!

WHAT YOU'LL NEED

  • 3 overly ripe bananas
  • 1/3 cup melted butter
  • 1/3 cup pure maple syrup
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 1/2 cup Fix & Fogg Almond Butter
  • 2 tsp cinnamon
  • 1 cup flour
  • 1/2 cup chopped dark chocolate/chocolate chips

METHOD

  1. Preheat your oven to 180C and line a loaf tin (15 x 24 cm) with baking paper.
  2. Combine all the ingredients except the flour and chocolate in your food processor and blend until smooth (Alternatively, you can mash the bananas and mix everything together by hand- like mama in the olden days!)
  3. Sift the flour into a big mixing bowl and add your wet mix, stirring until just combined.
  4. Lastly, stir through the chocolate and pour into your prepared tin.
  5. Bake for 45-50 mins until springy to touch and skewer/knife comes out clean.
  6. Leave to cool in the tin before turning out and slicing, or even better, enjoy warm and slathered in the rest of the almond butter from your jar.
