- Preheat oven to 180C (350F) and line a muffin tray with muffin cases.
- In a large mixing bowl combine the applesauce, Fix & Fogg Almond Butter, melted coconut oil (or butter), maple syrup, egg, milk, vanilla and mix together until smooth.
- Add in the flour, oats, baking powder, baking soda, salt and spices. Fold together gently until just combined.
- Fill each muffin tin until 2/3 full and add a few cubes of apple into each muffin, pressing down lightly into the batter.
- Bake for 20 - 25 minutes until springy to touch and a skewer/knife comes out clean.
- Leave muffins to cool and begin making the glaze.
- To make the glaze, combine all of the ingredients in small bowl until smooth. You may need to add an extra dash of milk to get the right drizzling consistency.
- Once the muffins are cool, generously drizzle the glaze over the top.
It’s as easy as that! Makes 12 - 16 muffins. Store in an airtight container for 3 - 5 days.
