CHAI SPICED APPLE ALMOND BUTTER MUFFINS

WHAT YOU'LL NEED

For the muffin batter

  • 1/3 cup apple sauce
  • 1/2 cup Fix & Fogg Almond Butter
  • 3 tbsp coconut oil, melted (or butter)
  • 1/4 cup maple syrup
  • 1 egg
  • 1/4 cup milk of choice
  • 1 tsp vanilla extract
  • 1 1/4 cup plain or wholewheat flour
  • 1/2 cup old fashioned oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp cardamom
  • 1/2 tsp ground cloves
  • 1 - 2 apples, cubed

For the glaze

METHOD

  1. Preheat oven to 180C (350F) and line a muffin tray with muffin cases.
  2. In a large mixing bowl combine the applesauce, Fix & Fogg Almond Butter, melted coconut oil (or butter), maple syrup, egg, milk, vanilla and mix together until smooth.
  3. Add in the flour, oats, baking powder, baking soda, salt and spices. Fold together gently until just combined.
  4. Fill each muffin tin until 2/3 full and add a few cubes of apple into each muffin, pressing down lightly into the batter.
  5. Bake for 20 - 25 minutes until springy to touch and a skewer/knife comes out clean.
  6. Leave muffins to cool and begin making the glaze.
  7. To make the glaze, combine all of the ingredients in small bowl until smooth. You may need to add an extra dash of milk to get the right drizzling consistency.
  8. Once the muffins are cool, generously drizzle the glaze over the top.

It’s as easy as that! Makes 12 - 16 muffins. Store in an airtight container for 3 - 5 days.
