Choc-Top Peanut Butter Mousse Pots

WHAT YOU'LL NEED

METHOD

  1. In a medium bowl, combine the peanut butter and coconut sugar. Using a hand mixer or stand mixer, beat on medium speed for 30-60 seconds until smooth and well mixed. Set aside.
  2. In a separate clean bowl, whip the coconut cream on medium speed for about 1 minute until light and fluffy. Add the peanut butter mixture and beat until fully incorporated. Divide the mousse evenly between two serving glasses. Refrigerate while preparing the chocolate topping.
  3. Melt the dark chocolate either in a small saucepan over low heat or in the microwave in 20-second intervals, stirring between each, until smooth. Once melted, pour over the peanut butter mousse and garnish with crushed peanuts and a pinch of sea salt. Refrigerate for another 20 minutes, then serve.
