- In a medium bowl, combine the peanut butter and coconut sugar. Using a hand mixer or stand mixer, beat on medium speed for 30-60 seconds until smooth and well mixed. Set aside.
- In a separate clean bowl, whip the coconut cream on medium speed for about 1 minute until light and fluffy. Add the peanut butter mixture and beat until fully incorporated. Divide the mousse evenly between two serving glasses. Refrigerate while preparing the chocolate topping.
- Melt the dark chocolate either in a small saucepan over low heat or in the microwave in 20-second intervals, stirring between each, until smooth. Once melted, pour over the peanut butter mousse and garnish with crushed peanuts and a pinch of sea salt. Refrigerate for another 20 minutes, then serve.
