PEANUT BUTTER ROCKY ROAD

WHAT YOU'LL NEED

  • 250g white chocolate
  • 100g Fix & Fogg Smooth Peanut Butter
  • 1/2 cup freeze-dried strawberries or raspberries
  • 1/2 cup pistachios
  • 1/4 cup desiccated coconut
  • 1 cup marshmallows, chopped
  • 1/2 cup crushed ginger nuts (or any cookies)

METHOD

  1. Line a baking tin or dish with baking paper (we used a 20 x 20cm tin).
  2. Melt your white chocolate either in a double boiler or a microwave (if using a microwave, make sure to do it in 30 - 40 second increments and stir in between to avoid burning). 
  3. Mix in the Fix & Fogg Smooth Peanut Butter followed by the remaining ingredients until everything is well coated and combined.
  4. Pour into prepared baking tin and spread out to your desired thickness.
  5. Set in the fridge for at least an hour, then slice and enjoy!
