SATAY ALMOND BUTTER UDON NOODLES

WHAT YOU'LL NEED

For the bowl

  • 1 cup green beans or sugar snap peas, trimmed
  • 1 cup mung bean sprouts
  • 1 red capsicum, finely sliced
  • 2 spring onions, finely chopped
  • 1 packet udon noodles

For the sauce

  • 2 tbsp soy sauce
  • 1/4 cup Fix & Fogg Almond Butter
  • 1 clove garlic, crushed
  • 1/4 cup coconut milk
  • 1 tbsp sriracha
  • Juice of 1 lime

To serve

  • 1/2 cup freshly chopped coriander
  • 1 red chilli, finely chopped
  • Lime wedges

METHOD

  1. Prepare the noodles as per package instructions and set aside.
  2. In a small bowl, mix together all of the sauce ingredients and set aside.
  3. Heat a large frying pan over medium heat and add a tablespoon of oil. Fry the spring onions until golden brown and then add the remaining vegetables and fry until just cooked through.
  4. Lower the heat and add in the noodles and sauce.
  5. Stir everything together in the pan and cook until the noodles are heated through.
  6. Garnish with coriander leaves, chilli and lime wedges then serve!

This recipe will serve 3–4 people and will last a few days in the fridge. You can also use any of our savoury nut butters in the sauce to mix things up!
