- Prepare the noodles as per package instructions and set aside.
- In a small bowl, mix together all of the sauce ingredients and set aside.
- Heat a large frying pan over medium heat and add a tablespoon of oil. Fry the spring onions until golden brown and then add the remaining vegetables and fry until just cooked through.
- Lower the heat and add in the noodles and sauce.
- Stir everything together in the pan and cook until the noodles are heated through.
- Garnish with coriander leaves, chilli and lime wedges then serve!
This recipe will serve 3–4 people and will last a few days in the fridge. You can also use any of our savoury nut butters in the sauce to mix things up!
